Since 2000, enrollment in culinary schools has increased more than 40%. Many of the students are under the delusion there's a chance they'll wind up the next Bobby Flay. I didn't know there was such a demand to be a condenscending smart-ass.

Iron Chef America

It would be remiss of me not to mention this upcoming Sunday's "Iron Chef America" series premiere. I am actually looking forward to a new series from The Food Network for the first time in a while. This first battle is between Iron Chef Bobby Flay and Challenger Rick Bayless. Bayless is a master of Mexican cuisine, and it should be interesting to see how he goes against Flay's Southwestern dominated culinary arsenal.

Check out this New York Times Preview (Subscription Req'd-free) which provides some great insight to how Food TV adapted the program and yet remained true to the original series. Caution, the article is a spoiler as it unveils the secret ingredient and gives away too much of the first battle for my tastes.

I'll tell you this, there won't be a live eels marinated in sake.

Take heed, Food Network

Do you get the impression that the Food Network has been taken over by the editorial staff of Redbook, Ladies Home Journal, and the Oxygen Network? Their content is shifting away from the appreciation of the culinary arts to explorations into low carb dieting and the history of popsicles.

Enter British Chef Gordon Ramsay, with "Ramsay's Kitchen Nightmare" coming to BBC America on Tuesday evenings. Just the hard hitting, gritty restaurant realism absent from Food Network's increasingly bland programming schedule. Watch Ramsay try to turn around struggling restaurants with his brand of profane instruction.

Here's a clip. Sounds like it could have been directed by Quentin Tarantino.

Ins and Outs

The inevitible In and Out list for 2005 Food trends has no suprises when
it comes to a certain celebrity chef whose star crashed hard on network television.
On the opposite side of the spectrum, Ina Garten's star, who's on my "one to watch" list, is rising.

Other outs for this year include Low Carb Diets and splenda. I'm surprised the
overplayed "anything flavored with chipotle" isn't on the list.
2004, chipotle this and chipotle that... really wore me out.


Lost Empires

Jean-Georges Vongerichten's restaurant empire is already stretched too
thin and quality has suffered. Is Bobby Flay the next to join him? Both of
them along with Nobu Matsuhisa have announced new locations of their
restaurants at the Atlantis, Paradise Island resort in the Bahamas. With Mesa Grill
Las Vegas just opened, and Bar Americain opening in March 2005, he just might be overplaying his hand.

This is old news, but speaking of Bobby Flay, he's a judge on CBS' new reality show "Wickedly Perfect, debuting this Thursday, January 06 at 8pm. Looks awful!
